The Best Comfort Food {Fried Chicken}

I've been watching what I eat and trying to get healthier, but I will confess that a few days ago I made some comfort food for dinner.  

And by comfort food I mean the ultimate comfort meal.....fried chicken and mashed potatoes. 
Now, I don't make food like this all the time.  We might have fried chicken twice a year.  But when I do make it, it's always a favorite in our house!


 My husband doesn't like chicken on the bone so I use boneless chicken tenders.  I soak them in buttermilk and then coat them with flour, salt and pepper mixture and fry in very hot oil.  I learned this little recipe from watching Paula on the Food Network. 



And of course I serve them up with mashed red potatoes.  Lots of butter.  Lots of sour cream. 

I'm guilty.
